"We had a lovely meal at the Nova: the food was well presented, had the right temperature and varying textures, staff was attentive and the wine list well decorated and with fair prices. But what really got me thinking is (and I hope that the very lovely host and cheffe Alexandra Ziörjen reads this! that the restaurant brands itself as innovative (hence the name Nova? and respecting the produce. How then, I wonder, can you put a dish with foie gras on the menu? For over 40 years, this horrific practice of fattening ducks has been illegal in Switzerland. Only thanks to some lobbying, it is still legal to import it – what a farce. Now a wonderfully spirited and creative cheffe like Alexandra should not have to rely on such a product. Respect produce? Start there. Respect animals, serve their best meat, but renounce torturing practices like fattening. Read some recent surveys: Only a small group of gourmands still eat and defend foie gras, while the vast majority would like to have it banned altogether (I am no animals rights activist, but go ahead and watch a documentary on youtube about foie gras, if you think I am exaggerating . Don 't just put it on the menu for the Michelin guys. With her talent, Alexandra Ziörjen would not have to rely on this archaic product . Follow your heart, replace that with a starter that connects with people 's hearts.This really left a bitter aftertaste to an otherwise wonderful stay."
