"Servire Roma dalla fine del 2010, Metamorfosi ha intagliato una nicchia tra la scena gastronomica in gran parte tradizionale di Roma, lo Chef e il proprietario Roy Caceres facendo così prendendo ingredienti locali e “trasformandoli” in piatti che evocano idee ed emozioni. Situato in via Giovanni Antonelli, nella zona di Parioli, è subito all'ingresso che gli ospiti sono attratti da colori neutri e legno, il calore esaltato dal personale atteso da un ristorante stellato Michelin e servizio particolarmente attento il lunedì sera dove solo altri tre tavoli sono stati occupati nel corso di 140 minuti. Deliberatamente al passo, e facendo riferimento a tutto dall’infanzia colombiana dello chef Caceres al tempo in Giappone, i commensali sono invitati a decidere tra menu degustazione e una la carte dopo la versata dell’acqua, quest’ultimo scelto per il desiderio di oggetti specifici e a cominciare da benign Wheat Crisps seguito da molto più interessante pane fatto in casa con una diffusione miscelata di burro di miele e olio d’oliva. Dabbling nel modernismo, un caricabatterie iSi senza dubbio coinvolto in schiuma di patate con Octopus e cipolle per stuzzicare i palati, corso uno caratterizzato dalla firma di Metamorfosi “Carbonara Egg 65°” che soffoca il piatto di Roma firma tramite circulatore di immersione con Chicharrones sospeso mentre Scallop Ceviche si avvicinò a un profilo di spezie sudamericano utilizzando salsa calabrese al posto di Aji Peppers. Whimsical di nuovo con Primi, Caceres’ S-foglia sostituendo Pasta con Broccoli che circonda Pork bagnato da Almond Cream, “Encased” Risotto cerniere più sulla preparazione della tavola di qualsiasi altra cosa, un po’ gommosa anche se il gusto e la consistenza di riso, funghi e nocciole sono deliziosi. Suggerendo il €85 wild-caught Mallard “per due”, una preparazione da tavolo che placca il seno accanto a Carob e Squash con i suoi semi, ripida-precing è stato giustificato attraverso l'aggiunta di piatti satellitari che offrono Confit con Chestnuts e Liver sotto Tartufi leggermente addolciti da Balsamic. Usando l'inglese Stilton avvolto nel cioccolato bianco come ponte per Dessert, una scelta inaspettata ma piacevole in Italia, è stato dopo un ritardo un po 'protratto thay “Malaga 2.0” arrivato, l'idea da qualche parte tra Halo Halo e Panettone decostruito grazie a Egg Yolk Ice Cream, boozy Raisins, Citrus e Panettone."

"The food was excellent and the ambience was quiet and, if it was daylight, the view would have been fantastic. The restaurant is high on the mountain overlooking the Amalfi coast. An added bonus was a free shuttle from our hotel in Amalfi (though you should plan to tip the driver because 1) a taxi would cost at least 35 Euros each way and 2) like any ride through the narrow and curvng strreets in the hills around the Amalfi Coast, the drive is challenging. I rated the service a 3 out of 5 only because I did not want that rating to detract too much from my overall rating. It's a small restaurant and they had only two servers (one of whom was new, I believe) and one bartender with an unfriendly demeanor who did not seem to give much of himself to assist the servers. A large group came into the restaurant when my wife and I were about halfway through our meal. From that point onward, it was a struggle to get any attention, to say the least. Getting the check to pay when we were finished was an incredible ordeal. Even after we got up from our table after waiting at least 15 minutes after first asking for the check, and thogh I could see the more experienced server preparing our bill, it still took another 5-10 minutes to present it to me for payment. Still, i would attribute this to the unfortunate circumstances of understaffing and the untimely (for us and, perhaps, the servers) arrival of a large party that appeared to be some important people. I recommend that you give this restaraunt a try because the chef's preparations alone are worth the trip."

"Sin; I'll start by saying that we stopped in this place for lunch hoping to taste something different than the usual sushi; the fact is that the idea of combining these two cuisines could have been fun to try, IF there had been a quality of a more refined and fresh raw material. We sit down around 1pm, the place is empty but clearly dirty, and I don't know, maybe the waitress, seeing us quite young, thought it best to start taking away our glasses before even showing us the menu (for us only with QR code for other diners who came later also on paper stopped before this happened, looks at us with a superficial expression and goes away without telling us anything or explaining what they did in this place or how it worked; after a few minutes we realize that a QR code was already on our table, after ordering I head to the bathroom which is also dirty, but what strikes me is the waitress who, standing barefoot above the counter, cleans the shelves instead of taking care of the room or tougher than the bathrooms.. pretending nothing happened I go back to the table hoping to finish as correctly as possible but after eating they leave the dirty dishes to our fate until we ask for at least the coffee, together with the latter they bring us the bill directly as if they wanted to send us away. In the end we leave much more disappointed than an all you can eat. The idea might have been nice (not original anymore but it's not enough."
