"Paul Bocuse is no longer there but his restaurant remains an exceptional address, where his cuisine is reinvented but respected, just as is the choice of products. It's not easy to succeed in a tutelary shadow and it will take a little more time and adjustment to achieve it. The gargantuesque side has disappeared, the map including signature dishes is more seasonalized. Small settings are necessary on the beverage service to avoid that glasses (water and wine) remain empty and ke dessert wagon, with an elegant setting of desserts on the part, makes it less dreaming than Mr. Paul's trolley.
