"Das Restaurant befindet sich im ersten Stock eines alten Gebäudekomplexes, der als Hotel, Gasthaus sowie für kulturelle Veranstaltungen genutzt wird. Das Restaurant besteht aus drei Zimmern, die meisten Tische waren um 19.30 bereits vergeben. Die mit einem Michelin Stern ausgezeichnete Küche bot ein 3-Gang-Menu zum Preis von 115 ,-CHF an, das auf regionale Produkte setzt und ansonsten den sommerlichen Temperaturen angepasst war. Das Amuse bouche, eine Mousse von Gänselebermousse und Rotweinbirne, überraschte angenehm. Auch die Vorspeise, ein mariniertes Hamachifilet mit einer Pimms-Gurken-Spuma und Fenchelsalat war für meine Gaumen sehr fein aufeinander abgestimmt undüberzeugte. Dagegen konnte der Hauptgang (Barre de linge mit Amalfi-Zitrone, Tomatenvariation und Gnocchi nicht ganz mithalten, auch fehlte mir etwas die Verbindung zwischen den einzelnen Aromen. Letztendlich war mir die Säure der Zitronen und der eingelegten gelben Tomaten etwas zu dominant. Beim Nachtisch überzeugte mich die Nektarinentarte mit ihrem besonders krossen Boden mehr als die Trilogie von weisser Schokolade und Zwetschge.Die Auswahl an offenen Weinen empfand ich als etwas limitiert. Als Weisswein wurde beispielsweise ein toskanischer Chardonnay aus dem Jahr 2016 angeboten, der die typische fruchtige Note vermissen liess und für meinen Geschmack keine ideale Weinbegleitung zum Fisch darstellte. Auf Nachfrage gab es dann auch einen Chardonnay aus dem Burgund mit komplexem, leicht fruchtigem Bouquet. Der offene Wein wurde uns nicht berechnet. Der Service, bestehend aus zwei jungen Damen, war angenehm und diskret. Insgesamt war der Abend im Bel Etage eine gute Erfahrung, um einen Einblick in die gehobene Schweizer Küche zu gewinnen. Und das Konzept des Hauses ist,ohnehin so interessant, dass sich ein Abstecher in jedem Fall lohnt."

Excellent, very refined cuisine in a peaceful and very pleasant setting (terrace). Extremely warm welcome, server with very good advice. A pure moment of pleasure, an experience of which we will keep a superb memory.

Visited during ArtBasel and it was worth it. Great wine list, amazing food and TOP service. Even went out of the way to accommodate an extra guest that joined us last minute! 100% recommend and will definitely return.

Service was really good. They catered for my fructose intolerance right down to the smallest detail and gave me different options without reservation. The food was very tasty especially the tuna tartate. Highly recommend

The level is far from one star, rather lower middle category. Stuffed French guinea fowl is simply inedible and unimaginative. The eggplant and oregano tart starter sounds better than it tastes. Service is nice but not star level… Unfortunately Michelin no longer gives a reliable rating…

Giving it an easy 5 stars dont even have to think about it much, what impeccable service! The menu is varied, but French heavy, it does have a Michelin star, thats what drew us, but were recommending it because of the elegant environment, amazing service, and the best we ate in Basel all in all.

Top Sterne Küche in einem typisch Basler Ambiente. Das Essen, eine Explosion des Geschmacks. Der Service, das Essen, die Räumlichkeiten einfach perfekt für einen schönen Abend. Und Übernachtung im Hotel. Auch zu Corona Zeiten ist man hier sicher, da der Abstand garantiert und alles clean ist. Wir kommen wieder.

Visited the restaurant back in November (menu has changed since then). Warm and quaint interior. The service was delightful, both waitresses were very eager and helpful. The dishes were tasty, although a bit simplistic, and thus I’m ambivalent about the michelin star. However it is a fine restaurant by swiss standards and the value for money is unbeatable.

We chose this restaurant to celebrate special occasion. We were disappointed as our experience did not match our expectations, that were based on very nice reviews that this restaurant has. Shortly: food was average no creativity that would be expected from Michelin star restaurant, we were served cold red wine and service in general was average. However, house champagne was good and our daughter liked the taste of ravioli mushroom dish. Would not go back there and would not recommend , as for the same price there are much better places to eat in Basel.

While eating the deer course of our menu, I bit into something extremely hard. It looked like a very small stone but was too round and the kitchen staff claimed it was a shotgun pellet used to kill the deer. While I almost cracked a tooth and was in pain, our server could barely manage to give an apology (certainly not a sincere one) and we were offered absolutely nothing as a gesture of goodwill in compensation for this. This for the supposed high experience of eating in a one-star restaurant and CHF 500 bill. Incredibly unsympathetic and disappointing. Worse, while not an expert, I find it extremely hard to believe that killing deer with fine birdshot pellets is in any way considered ethic...

"Cheval Blanc is the ultimate classic French fine dining experience in Switzerland. We came here to celebrate my birthday while in Switzerland looking for a 3 Michelin stars experience. Located in the historical Grand Hotel Les Trois Rios. The riverside setting is charming and romantic. You start by a welcome drink at the terrace looking at the Rhine greeted by suited , polite and professional staff. The head chef Peter Knogl came to say hi before we moved to the main dining room and service started. The decor and interior is classy retro French with high ceilings, arches, classic chandeliers, large windows and round tables with candles. Ambience is warm and intimate. Service was top notch and impeccable. Staff were all knowledgeable with refreshing attention to details. Cuisine was modern french with Mediterranean influences, flavors were complex and dynamic. Ingredients were chosen carefully and courses were presented beautifully. I liked all of my courses, highlights of the menu were the Sardine Macaron, Langoustine curry, Red Mullet filet and the French saddle of lamb with mediterranean flavors. Wine pairing was excellent and enhanced every course taste and flavor. Sommelier was very professional and knowledgeable yet intimidating a bit. The French Cheese selections from Maître Antony in Ferrette was aromatic, rich and satisfying, Maître Antony is one of the best in the world that many Michelin starred Chefs get their fine cheeses selection from. The night ended well with a couple of delightful desserts courses, few delectable bites and some velvety chocolate. Overall, we had an elevated fine dining experience that will bring me back if in Basel again."
